Must-Try Recipe: The Best At-Home Lunch Sandwich

It’s no secret that we love food & look forward to eating on a daily basis. When working from home – whether it’s a normal part of your job or because you’ve been thrown into the WFH life due to Covid – it’s important to have daily rituals (check out this blog post for more WFH tips). Stepping away from our computers to make a quick lunch is one of our favorite parts of the work day. It’s made even better when it’s a delicious, light-but-filling sandwich bursting with great flavors.

We developed this recipe based on our go-to sandwich order at Whole Foods, but it’s even more fun when you’re the one making it & deciding how much of each ingredient to put on. Start with a good sourdough (or bread of your choice!), spread chipotle mayo on one side & avocado on the other, and top with goat cheese, pickled jalapeños, tomatoes, red onion, your favorite greens & turkey (or tofurky!). We’re sharing our ingredient ratios in the recipe below, but the amount of ingredients used is completely up to you & you’ll discover your rhythm soon enough. The flavors blend together perfectly & we hope you’re as big a fan as we are!

The Best At-Home Lunch Sandwich

Prep time: 5 minutes
Servings: 1

Ingredients
2 slices sourdough bread
1-2 tbsp chipotle mayo (we love Sir Kensington’s)
1-2oz goat cheese
Red onion, sliced
6 pickled jalapeños (see the recipe we use below!)
1/2 tomato, sliced
Greens of choice (we love getting a pre-washed arugula & spinach mix)
1/2 avocado
Turkey (or Tofurky – the peppered flavor is our favorite!) slices
Salt & pepper to taste

How to Pickle Jalapeños
Cut jalapeños into slices & mince 1-2 cloves of garlic.
Boil 1 cup water, 1 cup distilled white vinegar, 1 tbsp sugar & 1 tbsp salt.
Once boiling, add the jalapeño slices & garlic to the pot. Stir & turn off the heat.
Let sit for 15 minutes – you’ll notice the color change!
Carefully pour the jalapeño slices, garlic & liquid into a jar with a tight-fitting lid.
Store in the refrigerator & enjoy for up to 3 months.

Instructions
Toast sourdough until golden brown & delicious.
Spread chipotle mayo on each slice of bread.
Layer & press goat cheese on one of the slices of bread.
Mash avocado on the other slice of bread.
Sprinkle salt & pepper on the avocado.
Layer jalapeños on top of goat cheese, ideally so that you get one per bite.
Add red onion & tomato slices.
Top with a handful of greens.
Add turkey or Tofurky slices – we usually go for 3-4 slices.
Carefully put the chipotle mayo & avocado slice on top of the sandwich, cut in half & enjoy!!


We can’t wait for you to try this sandwich!! The best part is that it’s completely customizable, so you can switch up your ingredient choices whenever you’d like.
