Cozy Soups to Warm You Up This Winter

There’s nothing like a warm bowl of soup in the winter to warm your bones, belly & heart. We think soup gets a bad wrap for “not being filling,” but we’ve had plenty of hearty soups that keep us happy and full all through the day or night.

Below you’ll find a round up of our favorite soups to keep you warm throughout these chilly winter months! We’ve listed the ingredients next to the recipe’s photo, but click the image or title to see the full recipe. After you’ve made the quick & easy soup your heart desires, just sit back, relax, turn on a holiday movie & enjoy!

Tortilla Soup

This is one of those recipes that has become a staple in our dinner rotation. The soup has a great flavor, but we really love going crazy with the toppings. You can add avocado, cilantro, radish, serrano peppers, and tortilla strips!

Ingredients:

  • 2 tablespoons olive oil

  • 1 yellow onion – diced

  • 4 cloves of garlic – minced

  • 2 teaspoons of ground cumin + 1 teaspoon paprika

  • 1/2 teaspoon of salt & pepper each

  • 14oz. can of fire-roasted diced tomatoes

  • 4 cups vegetable stock

  • 4 4-inch corn tortillas

  • 1/2 cup each - monterey jack cheese & sharp cheddar

Creamy Tomato Soup

We’re only slightly obsessed with everything Tieghan at Half Baked Harvest does & this twist on a classic creamy tomato soup is no different. The best part? You barely need to buy any ingredients!

  • 6-8 heirloom tomatoes

  • 1 sweet onion

  • 3 tablespoons extra virgin olive oil

  • 2 tablespoons fresh thyme leaves

  • 1 cup whole milk

  • 1/3 cup basil pesto

  • Parmesan

  • Salt & pepper

Pair with grilled cheese if you’re extra hungry & your stomach will thank you.

Healthy Broccoli & “Cheese” Soup

Ever since we were little, we’ve LOVED broccoli & cheese soup. Many of the recipes you’ll find online use a ton of cream, but this healthy & vegan recipe by Lindsay at Pinch of Yum won’t leave you feeling guilty.

Ingredients:

  • 1/4 cup olive oil

  • 2 cloves minced garlic

  • 1/2 of a chopped onion

  • 1-2 stalks celery + 1 large potato

  • 4-5 large carrots + 2-3 cups broccoli florets

  • 2-3 cups vegetable broth + 2 cups almond milk

  • 1/4 cup nutritional yeast 

  • croutons

Spinach & Artichoke Soup

If you order spinach & artichoke dip whenever it’s on the menu like us, then this is the soup for you. We love that Tiffany from Creme de la Crumb adds tortellini that will keep your belly feeling full.

Ingredients:

  • 2 tablespoons butter + 1 tablespoon flour

  • 14 oz. can artichoke hearts

  • 4 teaspoons minced garlic

  • 2 cups chicken or vegetable broth

  • 2 cups chopped baby spinach leaves

  • 4 ounces cream cheese

  • 2 cups half and half (fat free or regular)

  • 12 ounces cooked tortellini of your choice

  • 1/3 cup shredded parmesan cheese

African Peanut Soup

We fell in love with West African peanut soup the first time we had it as a sample at Native Foods in Los Angeles. It’s creamy, spiced & leaves you wanting more as soon as you’ve finished the bowl. If you love sweet potatoes, you can add one in; however, Kate at Cookie + Kate doesn’t include them in her recipe.

  • 6 cups low sodium vegetable broth

  • 1 medium red onion

  • 2 tablespoons minced fresh ginger

  • 4 cloves minced garlic

  • 1 bunch collard greens (or kale)

  • 3/4 cup unsalted peanut butter (chunky or smooth)

  • 1/2 cup tomato paste

  • Sriracha or your favorite hot sauce

  • 1/4 cup roughly chopped peanut
