Must-Try Recipe: Mediterranean Quinoa Bake

We found this DELICIOUS recipe on Refinery29 and just had to share it with you all.
Our food staples are tomatoes, spinach, feta, quinoa, and artichokes, so it's no wonder that we LOVE this recipe that combines all of the above ingredients. This is a vegetarian dish, but if you want to add some chicken – go for it! 
The best part about this dish is all of the options! You can add & subtract whatever ingredients you want to make a quinoa bake that will keep you coming back for more.
2 1/2 cups cooked quinoa
1 1/4 cup fat-free feta cheese
1/2 cup shredded mozzarella
1 cup marinated artichoke hearts (in oil)
1 cup chopped spinach
1 cup halved cherry tomatoes
1/2 cup skim milk
1 tsp minced garlic
1 tsp lemon juice
1 tsp parsley or spinach
1 tsp onion powder or garlic salt
sea salt and black pepper to taste
Prepare quinoa. We've noticed that about 1 cup of dried quinoa amounts to 2 1/2 cups of cooked quinoa. While quinoa is cooking, cut cherry tomatoes in half, chop spinach leaves, and set aside.

Next, combine feta, skim milk, garlic, lemon juice, and parsley (or spinach) in a food processor until smooth.

When you're ready, stir artichoke hearts, cherry tomatoes, and spinach into quinoa, plus one tablespoon of oil from your jar of artichoke hearts. Pour the feta sauce into the mixture and top with onion powder (or garlic salt), salt, and pepper, combining thoroughly.

Transfer mixture to oven-safe casserole dish, spreading evenly. 

Top with mozzarella cheese and bake at 400F degrees for 15 minutes (or until cheese has melted).

Immediately plate & enjoy!
