Must Try: Grilled Cheese

If tea is a hug in a cup, then grilled cheese is a huge bear hug after being picked up at the airport by a loved one. Now, I've had my fair share of grilled cheese sandwiches: usually I use the standard white bread (so healthy I know!) with sharp cheddar cheese.  Sometimes, I'll even throw in a few pinches of mozzarella to get a little swirl going.  
But no, no, no.  Not anymore!  The grilled cheese sandwiches you're about to see go above & beyond the standard & they are the next seven grilled cheese masterpieces I will put in my mouth.  For the full recipe, be sure to click on the mouth-watering photo!

Jalapeño Popper Grilled Cheese

- 4 large jalapeño peppers
- 3-4 oz. cream cheese
- 4-5 green onions
-  4 slices colby jack or cheddar cheese
- 4 slices sour dough bread
- butter

Balsamic Blueberry Grilled Cheese

- 2 slices sour dough bread
- havarti cheese (or most white cheeses)
- fresh spinach or arugula
- 1/2 cup blueberries
- 1 tbsp. balsamic vinegar
- 1 1/2 tbsp. brown sugar


Lasagna Grilled Cheese

- 4 slices of bread
- 2 tbsp. butter & splash of olive oil
- 1/2 cup part-skim ricotta cheese
- 2 tbsp. chopped basil
- cherry tomatoes
- 1/2 cup shredded mozzarella
- salt & pepper to taste

Chile Relleno Grilled Cheese

- 1 poblano pepper
- 1 large egg
- 2 tsp. vegetable oil
- 2 slices white or sour dough bread
- 3 oz. Wisconsin Monterey Jack cheese
- 1 tbs. butter
- 1 roma tomato
- 2 tbsp. yellow onion
- 1/2 clove garlic
- 1 tbsp. cilantro
- lime juice, salt & pepper to taste

Roasted Jalapeño & Avocado Grilled Cheese

- 6 slices of bread
- 6-7 jalapeño peppers
- whole milk queso fresco
- 2 avocados
- sour cream


Grilled Cheese with Spicy Havarti, Cilantro Pesto & Roasted Tomatoes

- 2 slices sour dough bread
- 1/4 cup shredded jalapeño havarti cheese (or pepper jack)
- 1-2 tbsp. cilantro pesto
- 1/4 cup roasted tomatoes
- 1 tbsp. butter


Spinach & Feta Grilled Cheese

- 1/3 cup of crumbled feta
- 2 tbsp. of roasted red pepper relish
- 1/4 cup fresh baby spinach
- 2 slices 7 grain bread
- 2 pats of salted butter
- 1 pinch of dried parsley
