CLT: Chickpea, Lemon & Tomato Salad

We've been on the lookout for a perfect packed lunch for the office that's easy to make & simple to shop for. Taking cues from the classic BLT, this no-lettuce salad tastes delicious with only 3 main ingredients: Chickpeas, Lemon & Tomato. But since we have to eat this four days out of the week, we wanted to spice things up a bit.

Ingredients:
Garbanzo Beans/Chickpeas
Cherry Tomatoes
Lemon
Red Onion
Garlic
Basil
Olive Oil
Salt & Pepper

Cut cherry tomatoes in halves.

Dice red onion (try not to cry!).

Chop basil & garlic.

Combine ingredients & add lemon juice.

Add olive oil, salt & pepper.

Stir!

Separate into pre-packaged portions for a clean-eating week!
