Must-Try Recipe: Mondo Taco's 'Alex The Great' Replica

One of our all-time favorite restaurants (RIP Mondo Taco) closed down around Christmastime. We were heartbroken because it was one of our favorite places to order delivery from when we didn't feel like cooking. They had the best tacos & wraps with different flavor profiles from around the world. We especially loved the 'Alex the Great' – a wrap (or taco!) with rice, cilantro cream sauce, chipotle peppers, goat cheese & tempeh.

After mourning the loss for almost 8 weeks, we decided to try and duplicate the recipe on our own. Honestly, we're surprised that we got it right the first time! Our recipe tastes pretty much identical to the wrap we used to order at Mondo Taco. If you eat meat, definitely sub the tempeh for chicken!

Tempeh chipotle and goat cheese wrap

Chipotle, Goat Cheese & Tempeh Wrap (Mondo Taco's 'Alex the Great' Replica)

Prep time: 25 minutes
Servings: 4 dinner-sized wraps

Ingredients
1 cup white uncooked rice
3 cups water
2 7oz. cans of Embasa chipotle peppers in adobo sauce
1 11oz. Silver Goat goat cheese log from Trader Joe's
2 8oz Organic 3-Grain tempeh from Trader Joe's
4 LARGE flour tortillas

Cilantro Cream Ingredients

1 8-oz. package of cream cheese (we use light cream cheese)
1 tablespoon of sour cream (light is totally fine for this too!)
1 cup (8oz.) tomatillo salsa (we use the salsa verde from Trader Joe's)
1 teaspoon of black pepper
1/2 teaspoon of ground cumin
2 teaspoons of garlic powder
1 fresh squeezed lime
1 bunch of cilantro

Toppings
More cilantro cream sauce
Habanero sauce (to mimic Mondo Taco's Diablo sauce)

Prep Instructions
Cook the white rice following the instructions on the package. We did 1 1/2 cups of water for every 1 cup of rice.
Blend all of the cilantro creme sauce ingredients together in a food processor or blender.
**Feel free to taste as you go & add more of what you love, but this combo of ingredients is our favorite flavor!
Store cooked rice in an airtight container for future use.
Funnel cilantro creme sauce into a squirt bottle (or other container).

Assembly Instructions
Put the tortillas in the microwave or on the stove for a bit to get them loosened up.
Add rice in the center of the tortilla.
Cut tempeh (4 oz of tempeh, 1/2 of the brick) into 4 slices per wrap and arrange.
Add as many chipotle peppers as your heart desires. **We recommend 2-4 depending on your spice preference. Also be sure to lay them out near the tempeh so you get each ingredient in each bite.
Add a large drizzle of cilantro cream sauce. The more the merrier!
Crumble 2.75oz. goat cheese (1/4 of the log) per wrap all over the top of your concoction.
Channel your local Chipotle superstar and wrap it up like a burrito.
Place the wrap on a baking sheet and broil until the top is slightly golden brown.
Cut in half & eat up!

We hope you enjoy this as much as we do! Warning: IT'S SPICY and delicious. Add more cilantro cream to each bite to tone the spice down or add habanero sauce to set your mouth on fire. Your choice!
